Antique Copper Jam Pan With Swing Handle

This lovely old jam pan is quite deep. It has a rolled copper edge and one small handle for pouring. There is also a large copper rivet joined swing handle. This gorgeous jam pan is no longer suitable for jam making. It has some minor dents at the base. However this jam pan comes with loads of tradition and story and would make a valuable contribution to a kitchen decor. It calls out to be repurposed.

Copper jam pans have been around for hundreds of years. They have been specifically designed for making jams and preserves. They are wide and shallow, with sloping edges. This allows for rapid evaporation which is crucial for reaching jam setting point. The slanting edges help moisture to evaporate rather than run back into the mixture as is the case with vertical sides. Copper distributes heat evenly preventing hot spots that can cause the fruit to stick and burn. Due to its effective responsiveness to changes in temperature, copper provides more precise heat control, helping to prevent overcooking, thus maintaining texture and colour. Jam pans don’t need to be tin lined. They are used for specific cooking tasks that don’t produce questionable acids. Cooking time is shorter due to the excellent conductivity of copper. Most importantly, there is a certain romance in using a gorgeous vintage copper jam pan. It has stories to tell and it can become part of your family tradition when passing it down through the generations.
